Satanic black bass with charred cauliflower, currants, herbs

Ingredients

4 Black Bass Fillets

1 quart of cut cauliflower

1/2 Cup currants

1/2 Cup minced herbs, parsley, cilantro, mint

♦ Make sure your fillets have been scaled and have the pinions removed by your fish butcher.

♦ Season your fillets skin side with salt and pepper.

♦ Bring a pan (non-stick preferred) up on a flame. Add a little oil till it is very hot. Place your fillets 

skin side down over the pan and cook it till the skin is crispy.

♦ Take your cut cauliflower and toss it in salt and pepper, place it over an open flame till it is slightly 

charred. It should cook all the way through at that point. Toss it in some herbs, currants, and olive 

oil at the end.

♦ Place your cauliflower on a place and then put your fillets next to it. Add a little more chopped herbs 

and olive oil for texture.
